Chefs at TPC Deere Run try to incorporate healthier options into menus for food served to players at the John Deere Classic.   Quinoa is known as the "Mother Grain," and it was a stable in the diet of ancient Incas.  It is a great source of protein, and contains all eight essential amino acids that help build muscle.  It contains about 160 calories in a quarter-cup serving.  Mahi Mahi has a mild, sweet flavor that pairs well with herb salsas and fresh fruit; six ounces of Mahi Mahi contains 130 calories and 31 grams of protein - about half the recommended daily value of protein.

Ingredients and instructions:

6 ounces fresh Mahi, cut into four equal pieces

Coat the fish in egg white and press in 1.5 oz Cooked Quinoa

Then add 1 pinch of each of the following on the fish:
Cumin
Chili Powder
Garlic
Cayenne Pepper
Salt and Pepper

Saute Mahi Mahi in olive oil to internal temp of 145 degrees.

Slaw:
1 cup shredded cabbage
1/4 cup apple cider vinegar
1/4 cup sugar
1/8 cup chopped onion and bell pepper
Salt and pepper to taste

Saute 2 corn tortillas in olive oil to desired firmness.

Fill tortillas with Mahi and slaw, and garnish with a sprig of cilantro.
