Happy Monday!

Mondays have taken on a whole new meaning for me. Firstly and most obviously, they now start at 2am – which is when my first (of six, just in case) alarm goes off. Secondly and most importantly, part of my new position is to make sure your Monday starts off on the best note possible… which means a little more coffee and a lot more perspective as I begin my work week these days.

Because my work schedule did an about-face, I have had to change how I eat… and when I eat. I am never hungry until after Good Morning Quad Cities, in which I am all of a sudden STARVING and since there’s not a ton of time to go home and make breakfast in between cut-ins for Good Morning America and helping out getting WQAD News 8 at 11am ready, I have decided to pre-make all my breakfasts for the entire week. Actually make that two weeks. Yep – I’m that motivated (for now).
So, here’s the recipe I’m using for some delicious, filling breakfast bowls. You can really make it your own with different veggies, different meat, etc. but my favorite is sweet potatoes, peppers, onion, eggs, and bacon (oh yeah…):

I find that spending an hour making this on Sunday is well worth having 2 weeks worth (10) breakfasts that I can grab and go as I’m running out the door (half-asleep still) at 2:55am every morning. I put 5 portions in tupperwares in the fridge for the week. The other half goes in one big tupperware that goes in the freezer for the week. I’ll thaw it over the weekend, then divide that amongst 5 tupperwares for the next week. Boom.

As for dinnertime, that hasn’t changed as much. I am taking a little nap during the afternoon, so that I can be up in the evenings when Zach gets home and have dinner with him. However, I’m learning that the last thing I want to do when I wake up after 2 or 3 hours of sleep (4 if I’m lucky and if Zuno isn’t being annoying – i.e. barking at the garbage truck, postal carrier, leaves blowing around outside, etc., etc.) is make a full-on meal, so I’m utilizing my slow cooker a lot more or finding recipes that are super simple. Here’s a glance at what I’ve been making lately:

Do you have any slow cooker recipes, one-pot wonders, or simple meals that you swear by? I’d love to try them out for my next Meal Monday!
Also, what restaurants are you loving lately in the Quad Cities? I feel like there’s been a lot of new ones popping up that we need to try!
