Chef Toby shares a healthy restaurant style meal, you can make at home!  A great recipe to make in the new year!

Ingredients:

8 oz. Ahi tuna filet

1 TBSP. White sesame seeds

1 TBSP. Black sesame seeds

1 oz. Caribbean jerk seasoning

1 Haas Avocado

½ cup Nappa cabbage shredded

2 oz. Extra virgin olive oil

2 eggroll wrapper sheets (triangular cut)

Soy Vinegar Sauce

4 oz. low sodium soy sauce

2 oz. natural honey

½ tsp. red pepper flake

2 oz. distilled vinegar

Instructions:

Mix sesame seeds and coat one side of raw tuna. To a medium saute pan add olive oil and heat until smoking point is reached. Carefully place tuna into pan seed side down, sprinkling jerk seasoning onto unseeded side. Sear on both sides for approximately 45 seconds or until desired doneness is achieved. Remove tuna from pan and set aside.

Cut avocado in half around the pit. Remove pit and score both sides with a paring knife. Using a spoon, carefully remove the meat. Dice avocado into ¼ inch pieces.

To assemble, place a bed of Nappa cabbage onto the plate and place ring mold atop. Fill ring mold starting with avocado and then tuna. Remove ring mold and garnish.

To make sauce, bring soy sauce, honey, vinegar and red pepper flake to a boil and remove from heat. Enjoy!
