Chef Toby: Morel Mushroom Delight

On Friday, May 22, 2015 Chef Toby Christianson, founder and chef at Davenport’s Woodfire Grill, made morel mushrooms.

Chef Toby was in the Genesis Healthy Heart Kitchen with Genesis Heart Institute’s Ken Croken during “Good Morning Quad Cities” to make this delicious dish.

Chicken Morel Marsala


  • 4 tablespoons olive oil
  • 2 garlic clove, minced
  • 1/4 cup diced onion
  • ½ lb. morel mushrooms
  • 5 tablespoons flour
  • ½ cup Marsala wine
  • ½ cup beef stock
  • 1 cup almond milk
  • salt and pepper to taste
  • 4 (6oz.) chicken breasts
  • 1 cup seasoned flour




Add olive oil to hot saucepan.  Add garlic, onions and morels, sauté until mushrooms are tender.  Add flour and cook for approximately 1 minute.  Deglaze pan with marsala wine.  Add beef stock and almond milk and cook until sauce has thickened.

Dredge chicken breasts in seasoned flour.  Add to hot oiled sauté pan.  Cook on each side for approximately 4-6 minutes or until done.
