Glazed Salmon and Roasted Broccoli for 2

Prep and cook time:  30 minutes

Ingredients:

Two salmon filets

3/4 teaspoon soy sauce

1/2 teaspoon honey

1 teaspoon mustard

1 teaspoon extra-virgin olive oil

2 cups broccoli florets

1 teaspoon extra-virgin olive oil for the broccoli

Salt and pepper to taste

Preheat oven to 375 degrees.

1. Make glaze by combining soy sauce, honey, mustard, and 1 teaspoon of extra-virgin olive oil in small mixing bowl.

2. Season one side of salmon filets with salt and pepper.  Heat olive oil in pan on stove top over medium-high heat. Place seasoned side of salmon in the pan to sear, and pepper unseasoned side of salmon.  After searing 1 to 2 minutes, flip salmon and sear the other side for 1 to 2 minutes.  Brush prepared glaze on top side of salmon and transfer salmon filets to a baking sheet.

3. Toss cut broccoli with 1 teaspoon extra-virgin olive oil and spread broccoli on another baking sheet.  Season broccoli with salt and pepper.

4. Bake broccoli and salmon for approximately 15 minutes.  Salmon is done when thickest part of salmon filet is 135 degrees.
