Chef Scott: Poor Man’s Lobster

Chef Scott says you can still indulge in expensive tastes with a cheaper type of fish

BETTENDORF, Iowa - It's the season to make meals a bit more special.  But you don't need to bust the budget even if you have a taste for lobster.

Scott Community College's director of its Culinary Arts and Hospitality Management Center says he likes to use monk fish,

"Monk fish is a very under-utilized piece of fish," says Chef Brad Scott.

"But it tastes like lobster. Let's get started."

1. Heat a cast iron skillet
2. On the side, season fish lightly with salt and pepper
3. Add 3 tbsp of butter to the skillet to help make the sauce
4. Add fish to the skillet, cook each side for about 2 minutes
5. Place the fish on a pan and put it in the oven for six minutes to finish
6. In the skillet, add 3 tbsp of capers to give it a peppery, berry flavor
7. Add 2 tbsp of garlic
8. Take fish from oven, plate it
9. Drizzle the sauce over the fish

"These are the riches of Poor Man's Lobster," says Chef Scott.

"Talk about something that costs like Tilapia but eats like lobster. Enjoy!"
