You can avoid the heat with a cool soup idea that comes from Old Europe

BETTENDORF, Iowa -  It seems strange to talk about soup during the summer.  But you can avoid the heat with a cool soup idea that comes from Old Europe.

"I've taken you to Spain, I've taken you to Italy. Now it's time to go back to Deutschland," says Chef Brad Scott, director of the Culinary Arts and Hospitality Technology Center at Scott Community College in Bettendorf.

His recipe is Slumgullion made with  beef, tomatoes, and cabbage.

1. Add 3 cups of beef broth to a sauce pan
2. Add diced tomatoes
3. Add small cubes of cut beef, about 3 ounces per person
4. Add some chopped cabbage
5. Add chopped onions
6. Add 3 cups rice
7. Add a cup of vinegar
8. Add 1/4 cup sugar
9. Add 1 tbsp black pepper
10. Add 1 tsp of celery salt
11. Bring the dish to a roaring boil
12. Cook for four minutes
13. Chill for 45 minutes
14. Serve with a dollop of sour cream

"Sounds strange but tastes great," says the Chef.
