Why just throw greens in a bowl when you can have a show piece?
1. You get to use a PVC pipe, the chef's best friend
2. Take a bowl of mixed greens and add garlic and croutons
3. Add diced tomato, dried red onion, and diced green peppers
4. Add torn basil and oregano
5. Put the salad aside to make the vinaigrette dressing
Vinaigrette:
1. Start with three tablespoons of red wine vinegar
2. Add 3 tablespoons of olive oil
3. Add 2 teaspoons sugar
4. Add kosher salt and black pepper
5. Whip it together and then fold it into the salad
6. Toss it by hand
7. Use the PVC pipe for a mold
8. Fill the mold, pressing down hard on the greens to pack them
9. You can add chicken for a lunchtime salad
10. Slowly remove the pipe, garnish with olives and peppers
A perfect twist to a simple salad.
