Filling

4 Whole Eggs

2 Egg Whites

½ cup Gruyere

1/2 cup Parmesan (shredded)

½ cup Low-fat Cheddar

1/2 cup Chicken Sausage (chopped)

½ cup Turkey Bacon (chopped)

¾ cup Mushrooms (sliced)

1 cup Broccoli (chopped)

¾ cup Spinach (frozen)

½ cup Yellow Onion (chopped)

¼ cup Green Onion (chopped)

2 cloves garlic (minced)

4 tbsp. Extra Virgin Olive Oil

 

Crust

2 cups unbleached all purpose flour

1/2 tsp sea salt

2/3 cup coconut oil, scoopable

3-5 Tbsp ice cold water

 

Instructions

Combine flour and salt to a large mixing bowl with a whisk.

Add coconut oil by the spoonful.  Using a pastry cutter or fork, mash ingredients together until a wet, sand-like consistency is achieved.

Add ice cold water 1 Tbsp at a time and stir using a spatula or wooden spoon.  Add only as much water as needed unitl dough comes together.

Gently knead the dough in the bowl until all ingredients are combined.  Transfer to a well-floured surface and form into a disc with your hands.

Lightly flour the top of the dough and rolling pin.  Roll dough into a circle large enough to hang over the pan. as well as a rolling pin, and gently roll into a circle the shape of your pie pan.

Liberally coat a 9” pan with non-stick cooking spray.  Line the pan with dough, carefully folding in.  Cut excess dough from top of pan.

Preheat oven to 350 F.

In a large skillet, add 4 tbsp. of extra virgin olive oil and heat until just below smoking point.  Saute garlic, onions, sausage, and turkey bacon over medium heat until both meats are cooked through.  Add broccoli and mushrooms, reducing heat to low.  Cover and cook for approximately 5 minutes or until broccoli is al dente.

In a medium mixing bowl, whisk together eggs, egg whites and milk.  Add spinach, parmesan and gruyere, stirring to combine.  Pour mixture into pie shell and bake for 15 minutes.  Sprinkle cheddar cheese over top of partially set quiche and continue to bake approximately 40-45 minutes, or until quiche is set.  Enjoy!
