Make these easy mini chorizo egg bakes for any occasion!

Mini Chorizo Egg Bakes

Note: You can switch out ingredients for anything you would typically add to an omelet.

Ingredients:

  • 6 oz Chorizo, brown and allow to cool
  • 6 eggs, whisk and add 1/8 cup Half and Half
  • Salt, pepper, hot sauce, cayenne pepper to taste
  • 6 oz Mexican Cheese Blend
  • Any type of bread, cut into cubes

Whisk eggs, Half and Half, hot sauce, salt and pepper.

Grease muffin pan and add bread squares to each. Top with the ground pork. Sprinkle on Mexican cheese blend. Cover each with the egg mix. Bake at 300 degrees for 10 – 15 minutes, until golden brown.

Serve with sliced avocado, cilantro, salsa, sour cream!
