Chef Scott: Blackened Tilapia

You know, everybody says "get more fish in your diet".

"But oooh, that taste," says Chef Brad Scott, director of Scott Community College's Culinary Arts and Hospitality Management center in Bettendorf.

"I've got some tilapia today that's very unfishy tasting and we're going to make it so the spice overpowers the fish itself."

1. Take two tilapia fillets and rub olive oil on both sides
2. Add 1 tsp garlic to both sides
3. Add Cajun spice or Old Bay spice
4. Add cayenne pepper if you want to increase the heat
5. Place filets on a very hot skillet (don't add oil to the skillet)
6. Fry for 3 minutes on both sides

"This is so simple and good," says Chef Scott.

Serve with corn and wild rice and you've got a great meal.

"Low in cost, low in fat, and good for you."
