Try this light, satisfying, flavorful snack warm or cooled.
Ingredients
1 package edamame, unshelled
1/4 cup soy sauce
juice of an orange
2 tbsp honey local
1 tbsp rice vinegar
1 tbsp olive oil extra virgin
1-2 cloves garlic crushed
1 tsp ginger finely chopped
Instructions
Cook the edamame according to the package directions and set aside.
In a small bowl, whisk together the soy sauce, freshly squeezed orange juice, honey, rice vinegar, olive oil, garlic and ginger.
Place edamame into a gallon size zip-lock storage bag and pour the soy-orange juice mixture into the bag over the pods.
Allow the edamame to marinate for 1-2 hours, tossing the bag occasionally during the two hours to make sure the pods are coated well.
Remove pods from the bag and place into a shallow casserole dish.
Bake in oven for 20-25 minutes at 350 degrees.
Serve right out of the oven with a separate bowl to discard the empty pods.
