Here's a quick, simple meal or snack that's great for using those leftovers, and it's a heart-healthier alternative to a regular burger!
Ingredients:
2 tbsp. Extra virgin olive oil
2 cups cooked turkey meat (ground in food processor)
1 medium onion (finely chopped)
1 cup leftover stuffing, crumbled
¼ cup Panko bread crumbs
2 oz. fresh parsley (finely chopped)
2 eggs, whisked
¼ cup olive oil mayo
2 tbsp. leftover cranberry sauce
Heat 2 tbsp of olive oil in a large ovenproof frying pan, add onion and soften over a low heat for 5 minutes. Transfer to a bowl and allow to cool. Finely chop shredded turkey in a food processor.
In a large mixing bowl, add turkey, stuffing, parsley, bread crumbs and onion. Mix thoroughly, adding egg to bind. Shape into patties and chill in refrigerator for 30 minutes. Heat the olive oil in the pan. Fry burgers for 3-4 minutes each side until browned and outside is crisp. Transfer pan to oven and continue to cook for 10 minutes.
Mix olive oil mayo with cranberry sauce. Spread on hamburger buns and top with your favorite ingredients.
