Chef Toby shares a classic New Orleans recipe with a light makeover.
Ingredients:
1 pound kidney beans
1 cup celery (diced)
½ cup red bell pepper (diced)
½ cup green bell pepper (diced)
1 cup yellow onion (diced)
2 teaspoons fresh thyme (minced)
2 tablespoons olive oil
1 pound smoked turkey sausage or chicken sausage (sliced)
3 cloves garlic (minced)
4 tablespoons flour
2 teaspoons Cajun seasoning
Cooked white rice
Instructions:
In a large skillet, sauté sausage, celery, onions and peppers until tender. Add beans, Cajun seasoning, thyme and garlic. Simmer for 5 minutes. Add flour to thicken. Ladle over steamed white rice.
