Greatest Grains: Cajun Quinoa Salad Shake Up with Honey Lemon Dressing

Just add the dressing, shake, and you’re ready to eat!

Shake-ups are a handy way to carry all of your salad ingredients in one container when you're on the go.  Just add the dressing, shake, and you're ready to eat!

Ingredients

Chicken Quinoa Shake Up

  • 2-quart mason jar
  • 3 tbsp honey lemon dressing (recipe below)
  • 1/4 cup sprouts
  • 1/4 cup mushrooms sliced
  • 1/4 cup cooked quinoa
  • 1/4 cup red bell peppers sliced
  • 1/4 cup protein of choice (recipes below)
  • 1/4 cup zucchini sliced
  • 1/4 cup carrots grated
  • 1/2 cup salad greens packed

Honey Lemon Dressing

  • 6 tbsp olive oil extra virgin
  • 3 tbsp lemon juice
  • 1 tbsp honey locally sourced

Cajun Chicken Breast

  • 1 whole boneless chicken breast 5oz
  • 1 tbsp olive oil extra virgin
  • 1 tbsp cajun seasoning

Cajun Tempeh

  • 1 package tempeh 8oz
  • 2 tbsp cajun seasoning
  • 3 tbsp olive oil extra virgin

Instructions

Cajun Tempeh

  1. If you are using tempeh as your protein for this salad then follow instructions for making here, if you are using chicken instead please follow the instructions below.
  2. Unwrap a package of tempeh, slice into 1/4" thick slabs then dice into bite size pieces. Place in a mixing bowl.
  3. In the mixing bowl add cajun seasoning and half of the olive oil, toss until evenly coated.

Preheat a skillet with olive oil on medium high heat. Place tempeh in skillet and sautee for 5-10 minutes, or until your desired crisp is reached. Combine with salad.

Cajun Chicken Breast

  1. Place chicken breast on cutting board then sprinkle both sides with cajun seasoning.
  2. Preheat a skillet on medium high heat with olive oil. Place chicken in skillet and cook for 10-15 minutes, or until the temperature of the chicken reaches 165 degrees. Dice and combine with salad.

Honey Lemon Dressing

  1. In a mixing bowl combine olive oil, lemon juice, and honey.
  2. Whisk until thoroughly combined, combine with salad.

Cajun Quinoa Shake Up

  1. Prepare ingredients by slicing and dicing vegetables and cooking quinoa.
  2. Make sure mason jar is clean and dry, remove lid. Layer from bottom to top according to ingredient order above, starting with the honey lemon dressing on the bottom. Layer accordingly and cover with lid.
  3. When ready to eat simply give the mason jar a good shake to combine ingredients evenly and coat with dressing. Either place contents in a bowl or eat straight out of the mason jar. Enjoy!
