This lettuce-free salad is the perfect side dish, lunch, or light supper, especially on a warm day!
Ingredients:3 medium Tomatoes, wedged2 small Cucumbers, wedged1 small Red onion, sliced thinly1/2 cup Kalamata olives, pitted2 oz Feta cheese, cubed (~1/2 cup)1/3 cup Greek Vinaigrette4 whole Pepperocinis, for garnish (optional)
DIRECTIONS
1. Prepare the vegetables. Cut your tomatoes and cucumbers into small, bit-sized pieces. If you'd like, instead of the medium tomatoes you can use 1 1/2 pints cherry tomatoes, cut in half. Also, thinly slice the red onion.
2. Combine tomatoes, cucumber, red onion, and olives in a bowl.
3. Cut feta into small cubes. The feta may crumble a bit as you cut it into cubes. Add to your vegetable mixture - but don't stir just yet.
4. Add Greek Vinaigrette and toss lightly to coat.
5. For best results, use homemade Greek Vinaigrette and once the salad is combined, let rest in the refrigerator (covered) for about 30 minutes to allow flavors to combine.
6. Garnish with Pepperocinis, if desired. Enjoy!
