It's a one-pot wonder, full of veggies and fantastic flavor, and it's also heart-healthy!
Ingredients
1 pound turkey sausage, sliced
2 tablespoons olive oil
2 cups diced onion
1 cup diced celery
1 large red bell pepper, diced
4 garlic cloves, minced
1 bay leaf
2 teaspoons Creole seasoning
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 cup low sodium chicken broth
4 cups cooked long-grain rice
2 cups diced chicken
1 pound peeled raw shrimp, deveined
1/2 cup chopped fresh flat-leaf parsley
1 cup tomato juice
Garnish: chopped green onions
Directions
- Cook chicken, shrimp and sausage in hot skillet over medium-high heat. Add onions, celery, bell peppers and spices. Cook until tender.
- Add spices, chicken stock, and tomato juice, simmer on low for 15 minutes. Once flavors have developed, add rice and toss to incorporate all ingredients.
