It's a one-pot wonder, full of veggies and fantastic flavor, and it's also heart-healthy!

Ingredients

1 pound turkey sausage, sliced

2 tablespoons olive oil

2 cups diced onion

1 cup diced celery

1 large red bell pepper, diced

4 garlic cloves, minced

1 bay leaf

2 teaspoons Creole seasoning

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 cup low sodium chicken broth

4 cups cooked long-grain rice

2 cups diced chicken

1 pound peeled raw shrimp, deveined

1/2 cup chopped fresh flat-leaf parsley

1 cup tomato juice

Garnish: chopped green onions

 

Directions

  1.  Cook chicken, shrimp and sausage in hot skillet over medium-high heat. Add onions, celery, bell peppers and spices. Cook until tender.
  2. Add spices, chicken stock, and tomato juice, simmer on low for 15 minutes. Once flavors have developed, add rice and toss to incorporate all ingredients.
