18 Beef Tenderloin Filets, 3-oz each
Kosher Salt and Black Pepper to season filets
Olive Oil

Season Filets with salt and pepper and let come to room temperature. Rub lightly with olive oil and grill or broil over very hot flame to desired doneness. Top each filet with separate crust and brown in broiler till crispy.

Blue Cheese Crust
Butter 1 stick
Panko Bread Crumbs ¼ cup
Blue Cheese, crumbled 2 Tbsp
Black Pepper 1 tsp

Soften butter and combine all together in a mixer. Mix till combined. Roll into a log with plastic wrap or parchment paper and chill for use. Cut into a ¼" thick coin for topping steak.

Horseradish Crust
Butter 1 stick
Horseradish, prepared 1 Tbsp
Panko Bread Crumbs ¼ cup

Follow same directions for Blue cheese crust.

Parmesan Crust
Butter 1 stick
Worcestershire Sauce 1 Tbsp
Parmesan Cheese, grated ¼ cup
Panko Bread Crumbs ¼ cup
Garlic, chopped, fresh 1 Tbsp
Parsley, chopped, fresh 2 tsp Black Pepper 1 tsp
