Chef Brad Scott has been a journeyman chef and culinary educator for more than 30 years.

He’s worked himself through the ranks, literally starting out at the bottom as a dishwasher at the Boars Head restaurant. He apprenticed under the leadership of restaurant icon Al Johnson, working at each of Johnson’s many establishments (The Dock, JK Frisbees, Tortilla Flats and Governor’s) and helped open what is now the Iowa River Power Company.

Chef Scott next supervised the Augustana College Center Food Service where he learned about quantity cooking and catering.

His next position took him to Royal Neighbors of America’s Grandview Terrace as Director of Dinning Services and Nutritionist.

In 1996 Chef Scott became a part of the Eastern Iowa Community Colleges family as the Chefs Apprenticeship program facilitator at Scott Community College. At that point the culinary program had only nine students. Since then, Chef Scott has worked tirelessly in growing the program to an overflowing capacity of more than 135 students in 2012.
